minutesPalak paneer is a vegetarian dish originating from the Indian subcontinent, consisting of cottage cheese in a thick paste made from puréed spinach, tomatoes and seasoned with garlic and spices
Ingredients
500 grams cubed cottage cheese
350 grams spinach
2 tomatoes
1 onion finely chopped
4-5 cloves garlic
Juice of 1 lime
1 green chilli
1 tsp olive oil
½ tsp salt
Directions
- To a pot of boiling water, add some salt and then spinach leaves. Blanch the spinach leaves for about a few minutes until wilted
- Add the blanched spinach, tomatoes, garlic and green chilli to a blender. Puree to a smooth paste and set aside
- In a medium hot pan, add the oil and saute the onions until golden brown
- Add the cubed cottage cheese and fry until golden brown
- Add in the prepared spinach puree and mix. You would need to add around ½ cup water and simmer this sauce for about 10 minutes on medium heat
- The sauce will bubble and hence stir at regular intervals to avoid sticking at the bottom of the pan
- Add the juice of 1 lime, a pinch of salt and cook for about a minute
- Serve palak paneer hot with flat bread or rice
PRO TIP
- To make this curry a little flavourful you can add some garam masala and/ or chilli powder and/or turmeric powder
- Fresh cream would also give it an added touch
