All you need to do is toss in air-fried chunky potatoes in gochujang along with a few other ingredients, stir fry on a medium flame & serve with warm rice and few toppings! Gochujang-Roasted Potatoes are a different perspective on just having your normal air fried potatoes

INGREDIENTS

  • 4-5 large potatoes, peeled and cut into chunks 
  • 1 tsp salt
  • 1 tsp pepper 
  • Oil – 1 tsp
  • One onion, sliced
  • 1 tbsp garlic, grated
  • 1 tbsp ginger, grated 
  • Dark soy sauce  – 1 tbsp
  • 2 tbsp gochujang paste 
  • 1 tbsp oil
  • 1 tsp salt
  • ¼ cup cilantro, chopped
  • 1 tsp toasted sesame seeds (optional)

PROCEDURE

  • In a bowl, mix together 1 tbsp grated garlic, 1 tbsp grated ginger, 1 tbsp dark soy sauce, 2 tbsp gochujang paste, 1 tbsp oil and salt
  • Preheat the air-fryer to 400F for 5 mins 
  • Peel 4-5 potatoes and cut into chunks, add 1 tsp salt, 1 tsp black pepper powder and 1 tsp oil. Toss to coat and air fry for about 20 minutes at 350F (Follow the instructions of your air fryer and cook the potatoes to perfection)
  • In a skillet on medium heat, add about 2 tbsp of oil. Add sliced onions and stir fry for about 2 minutes 
  • Toss in the air-fried potatoes and the gochujang mix (Make sure the mix does not burn). Stir fry for about 5 minutes to cover the mix
  • Remove from heat and top with toasted sesame seeds and chopped cilantro 
  • Serve in serving bowl full of cooked rice

PRO TIPS

You can replace the potatoes with tofu or chicken tenders and serve with white rice
