Spaghetti Carbonara

Carbonara is an Italian pasta dish from Rome made with eggs, hard cheese, cured pork, and black pepper.

For this spaghetti carbonara we have used parmesan cheese and bacon! In just a few ingredients and in under 30 minutes this dinner is ready. 

The trick to making the perfect spaghetti carbonara is to work quickly once you add the egg and cheese mixture. For added creaminess the reserve pasta water is added!

INGREDIENTS

  • ½ pack spaghetti
  • 4 slices of bacon, chopped
  • 1 egg 
  • 1 cup parmesan cheese, grated
  • 2 tsp salt
  • 1 tsp pepper

PROCEDURE

  • In a large pot of water add about 1 tsp of salt and bring to a boil
  • Add pasta to the water and boil until a bit firmer than al dente
  • Reserve 1 cup of the pasta water and then drain pasta and leave aside
  • In a mixing bowl, whisk together 1 egg and 1 cup grated Parmesan cheese. Season with a little salt and 1 tsp black pepper
  • Meanwhile, in a large skillet on medium heat, add the roughly chopped bacon and saute until the fat renders. Remove and set aside 
  • Add the drained pasta to the skillet on medium high heat
  • Add the whisked egg and parmesan cheese mix to the pasta and toss for about 2 minutes. Do not overcook at this stage as the eggs might scramble 
  • Add the pasta water about ¼ cup at a time and more as needed for creaminess
  • Add the bacon back and serve immediately 
  • Dress with additional grated parmesan cheese and pepper 

PRO TIPS

  • In the egg & cheese mixture you can also add heavy cream for added creaminess to the carbonara 
  • Once you add the whisked egg and cheese mix to pasta, quickly mix this and add the reserve pasta water as required and work through the spaghetti quickly before the egg scrambles 
  • Instead of bacon you can also add guanciale or pancetta
