Rich dark decadent Old fashioned chocolate ganache cake

Ingredients

  • Dry Ingredients
  • ⅔ cup cocoa powder

  • 1 cup all purpose flour

  • 1 ½ cup powdered sugar

  • 1 ½ tsp baking powder 

  • 1 ½ tsp soda bi-carb

  • Wet Ingredients
  • 2 eggs

  • 230 ml milk

  • 1 tbsp white vinegar

  • 100 ml oil

  • 230 ml boiled water

  • Chocolate Ganache
  • 300 grams chocolate

  • 200 ml heavy cream

  • 1 tbsp butter

Directions

  • Measure and sieve all the dry ingredients in a bowl (Cocoa powder, all purpose flour, powdered sugar, baking powder & soda bi-carb)
  • In another bowl, mix mix and white vinegar
  • Add the milk & eggs
  • Add the wet ingredients to the dry with a whisk. This batter should be lump free
  • Add the boiling hot water to the above mix. The mix will be watery but don’t panic
  • Line two round baking tins with parchment paper and brush some oil to the tins  
  • Divide the batter equally among the tins
  • Bake it for 30 minutes in a preheated oven at 320F/160C or until when the toothpick comes out clean
  • Cool the cakes for around 1-2 hours/ preferable overnight over the kitchen counter 
  • While the cakes are cooking, for the chocolate ganache melt the chocolate in the microwave for 1 minute or until melted then add the cream and mix well. Add the butter for a shiny ganache 
  • Set aside overnight on kitchen counter
  • Assembly
  • Place the 1st layer of the cake on a cake stand
  • Spread the ganache
  • Add the 2nd layer of cake 
  • Spread the ganache again
  • Set in the fridge for 15 minutes
  • Add another thick layer of ganache and coat your cake well 
    Garnish with chocolate shavings, chocolate covered fresh strawberries, coco pops, chocolate mousse or anything versatile

PRO TIP

  • This is a super moist rich dark decadent old fashioned ganache cake and do not forget to add the boiling hot water that makes this cake lip smacking
