This delicious super easy soft and moist cake is loaded with crunchy walnuts and sweet dates. It is a perfect treat for any holiday

Ingredients

  • 100 grams/ ½ cup all-purpose flour

  • 15 grams/ 1 tbsp corn flour

  • ½ tsp baking powder

  • ½ tsp salt (optional, eliminate if using salted butter)

  • 125 grams/ ½ cup + 1 tbsp soft butter

  • 140 grams/ ¾ cup powered sugar

  • 2 whole eggs + 1 egg yolk

  • 30 ml/ 2 tbsp milk

  • 1 tsp vanilla essence

  • 50 grams chopped dates

  • 50 grams chopped walnuts

Directions

  • Preheat the oven to about 175 Celsius/ 350 Fahrenheit
  • Mix all-purpose flour, corn flour, baking powder in a bowl & sieve the mix at least 4 times for a soft cake
  • In another bowl mix eggs, milk and vanilla
  • Add butter to the flour mix & stir well
  • Add the wet ingredients to the flour & butter mix till everything is incorporated
  • Add the chopped dates & walnut & mix well
  • Pour the mix in your prepared cake tin & bake for 40 mins or until when poked through the poker comes out clean with no residue
  • Cool in cake tin for 5 mins & then remove; cool completely

PRO TIP

  • This cake can also be made without dates & walnuts. It would then be a simple tea/pound cake
