Ingredients
- Dry Ingredients
⅔ cup cocoa powder
1 cup all purpose flour
1 ½ cup powdered sugar
1 ½ tsp baking powder
1 ½ tsp soda bi-carb
- Wet Ingredients
2 eggs
230 ml milk
1 tbsp white vinegar
100 ml oil
230 ml boiled water
- Chocolate Ganache
300 grams chocolate
200 ml heavy cream
1 tbsp butter
Directions
- Measure and sieve all the dry ingredients in a bowl (Cocoa powder, all purpose flour, powdered sugar, baking powder & soda bi-carb)
- In another bowl, mix mix and white vinegar
- Add the milk & eggs
- Add the wet ingredients to the dry with a whisk. This batter should be lump free
- Add the boiling hot water to the above mix. The mix will be watery but don’t panic
- Line two round baking tins with parchment paper and brush some oil to the tins
- Divide the batter equally among the tins
- Bake it for 30 minutes in a preheated oven at 320F/160C or until when the toothpick comes out clean
- Cool the cakes for around 1-2 hours/ preferable overnight over the kitchen counter
- While the cakes are cooking, for the chocolate ganache melt the chocolate in the microwave for 1 minute or until melted then add the cream and mix well. Add the butter for a shiny ganache
- Set aside overnight on kitchen counter
- Assembly
- Place the 1st layer of the cake on a cake stand
- Spread the ganache
- Add the 2nd layer of cake
- Spread the ganache again
- Set in the fridge for 15 minutes
- Add another thick layer of ganache and coat your cake well
Garnish with chocolate shavings, chocolate covered fresh strawberries, coco pops, chocolate mousse or anything versatile
