This baked tandoori chicken features healthy and delicious Indian flavours that you can enjoy in the comfort of your home. Made from scratch, this chicken is marinated overnight with yogurt and spices and baked/grilled in the oven! (Traditionally in a tandoor which is a cylindrical clay oven) We baked this tandoori chicken alternative to roasting turkey for Thanksgiving
This delicious chicken dish is extremely popular in Indian restaurants, and it’s one of our favorite dishes to order. However, I also love making it at home without a tandoor oven. All you need is your oven.
In this recipe I am using both chicken thigh and drumsticks. Using chicken tenders is another alternative as well! I did keep the chicken skin on but trimmed off the extra fat.

Ingredients

  • 3 lb chicken (Drumsticks, thigh, tenders)

  • ½ cup yogurt

  • 2 tbsp lime juice

  • 2 tsp ginger paste

  • 2 tsp garlic paste

  • 1 tbsp kashmiri chilli powder

  • 1 tsp pepper powder

  • ½ tsp garam masala powder

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • 1 tsp dried parsley leaves

  • 1 tsp salt

Directions

  • Clean the chicken and pat it dry. If using chicken drumsticks with the thigh, ensure to trim the fat! Score the chicken as a part of the preparation
  • To prepare the marinade, in a large bowl, whisk together all the marinade ingredients. Place the chicken in the bowl with marinade and mix well, making sure the chicken is nicely coated in this marinate
  • Cover the bowl with plastic wrap and refrigerate overnight preferably or for at least 4-5 hours
  • Preheat the oven to 400 F
  • Place these chicken pieces on the grill rack leaving a little space between each piece! Place another oven proof tray under the chicken for the juices/oil to drip
  • Bake the chicken for about 30 minutes (Brush with butter, not required though)
  • After the first 30 minutes, turn the chicken pieces over and bake for another 10-15 minutes
  • Remove from the oven, place on a wire rack or board. Serve with lemon slices and onions

PRO TIP

  • This tandoori chicken should be enjoyed as soon as it’s cooked. However, if you have leftover chicken, store it in airtight containers in the refrigerator for 3 to 4 days 
  • Leftover chicken can also be used to making tandoori chicken sandwiches
