This simple pound cake is super moist, soft & delicious that is a perfect treat for any holiday or just to devour with your afternoon cup of tea 
While pound cake has traditionally been made with a pound each of butter, sugar, eggs, and flour, with some small adjustments of vanilla extract this recipe is soft and perfectly dense without being at all dry or crumbly and you would love this!

Ingredients

  • ½ cup all-purpose flour

  • 1 tbsp corn flour

  • ½ tsp baking powder

  • ½ tsp salt (optional, eliminate if using salted butter)

  • ⅔ cup soft butter

  • ¾ cup powdered sugar

  • 2 whole eggs

  • 2 tbsp milk

  • 1 tsp vanilla essence

Directions

  • Preheat the oven to about 350 Fahrenheit
  • Mix all-purpose flour, corn flour, baking powder, sugar & salt in a bowl. Sieve this dry mix at least 4 times for a soft pound cake
  • Add butter to the flour mix & stir well
  • In another bowl, mix the eggs, milk and vanilla (Wet ingredients bowl)
  • Add the wet ingredients to the flour & butter mix till everything is incorporated
  • Pour the mix in your prepared cake tin & bake for about 40 mins or until when poked through the poker comes out clean with no residue
  • Cool in cake tin for 5 mins & then remove; cool completely

PRO TIP

  • Decorated this cake with heavy cream that was whipped for about 10 minutes until soft peaks were formed! I also served this soft pound cake with a hot cup of green tea
