hourSamosa is a baked or fried pastry with a savory filling containing peas, potatoes, onions, cheese or meats! This is a vegetarian samosa containing potatoes, peas & spices. The pastry is shaped to form a triangular cone and the stuffing is filled in the pastry and then baked. This makes a delicious snack that is very popular in India, Middle East & Asian countries
Ingredients
4-5 boiled potatoes
1 cup boiled green peas
1 tbsp olive oil
1 tsp cumin seeds
1 tsp ginger paste
1 tsp garlic paste
1 tsp chopped green chilli
1 tsp turmeric powder
¼ tsp asafoetida
¼ tsp chilli powder
¼ tsp garam masala
¼ tsp cumin powder
½ tsp dried mango powder
1 tsp salt
¼ cup chopped coriander leaves
1 tbsp lime juice
- Pastry Dough
2 cup flour (1 cup all purpose & 1 cup wheat flour)
½ tsp carom seeds
½ tsp salt
¼ cup olive oil or clarified butter
4 tbsp water
Directions
- Wash and boil 4-5 potatoes for about 10 minutes. I have pressure cooked the potatoes for about 6-8 mins
- Cool the potatoes, crumble and set aside
- Boil green peas for about 5 minutes, drain and set aside
- For making the samosa pastry – In a large bowl, mix the flour with carom seeds, salt & salt and try to incorporate the oil well for about 2 minutes
- Add water and begin to form the dough, add some more water if required until the dough is firm and not sticky. Cover and rest for 20 to 30 minutes
- For making the potato filling – Heat oil in a pan to medium heat, add cumin seeds. When the seeds begin to splutter, add the ginger paste, garlic paste, and chopped green chilli
- Add turmeric powder, asafoetida, chilli powder, garam masala, cumin powder, dried mango powder & salt! Saute for about a minute
- Add the potatoes and green peas mix well! You can add chopped coriander leaves for freshness and lime juice. Leave this to cool aside
- To make the samosa dough
- Knead the dough for about 5 minutes and divide into 5 equal parts
- Oil the counter or the rolling board, place the ball and roll it into a round/oval shape to about 1/8th thickness. This should not be too thick not too thin
- Cut it through the center to make two semi-circles! Take one of the semi-circles and join the edges to make a cone shape. Stick the edge from one side of the cone to the other
- Fill the cone with the potato filling, press it down with a spoon, apply some water on the edges and seal well!
- Ensure that the samosa is well sealed & leave them standing on the baking tray
- Bake in a preheated oven at 350F for 30 mins (makes 12 samosas)
PRO TIP
- Serve the samosa with mint chutney or tamarind chutney or tomato sauce
- Alternatively, you can also deep fry the samosas on medium high heat for about 10 minutes
- You can also add an medium chopped onion to the stuffing where the onions can be sauteed with the spices before adding the potatoes & peas
