How to make Rocky Road

This rocky road is one of the easiest treats that you can make. Melted chocolate is tossed with your favorite nuts and marshmallows to create a decadent and fun treat for all. This rocky road recipe is fun for anytime during the year. More so we love preparing this during the holidays!

If you have had rocky road ice cream, you surely know what these flavours taste like! However, these are just made into bite sized fudge pieces. 

This is a no-bake dessert and super easy to make, but is a nightmare during the heat, so setting it in the fridge is a must!

INGREDIENTS

  • 100 grams soft unsalted butter
  • 150 grams dark chocolate
  • 150 grams milk chocolate 
  • Tea biscuits – 150 grams 
  • 50 grams marshmallows
  • 50 grams walnuts or nut of choice

PROCEDURE

  • Heat the butter, dark chocolate and milk chocolate in a saucepan over a gentle heat. Once all melted and incorporated set the mixture aside 
  • Place the biscuits into a ziplock bag and crush them with a rolling pin until some have turned to crumbs but there are still pieces of biscuit remaining
  • Fold the biscuit pieces and crumbs into the melted chocolate mixture in the saucepan, then add the marshmallows and walnuts
  • Tip the mixture into a baking tray/ tin and smooth the top with a wet spatula
  • Refrigerate for about three to four hours or overnight
  • To serve, cut into bite sized pieces and dust with icing sugar or cocoa powder 

PRO TIP

  • You can also replace the milk chocolate with white chocolate or keep it simple by just adding one type of chocolate 
  • If you do not have walnuts, you can also use peanuts or cashew nuts based on your preference 
  • Use a mix of digestive and shortbread biscuits that would enhance the flavor of this rocky road 
  • You could also add coconut, glazed cherries and the ingredient list would vary depending on the country. Make this recipe yours by adding the ingredients you love!
