Rava Idli

Rava idli is a variation of the popular South Indian breakfast item idli, made with rava (semolina). It is an ideal morning breakfast recipe and can be prepared without the hassle of grounding and fermenting the batter. 

This is a simple and easy way to make fluffy rava idilis!

Rava idli is usually devoured with chutney or sambar (Vegetable stew) 

INGREDIENTS

  • 1 cup semolina
  • ¾ cup plain yogurt
  • ¼ cup water 
  • 3-4 tbsps water (Adjust batter consistency)  
  • ½ tsp baking soda
  • ½ tsp salt
For the Coconut Chutney
  • 1 cup fresh grated coconut
  • 1 clove garlic
  • Ginger – 1 inch
  • 2 inch tamarind piece 
  • Green chillies -2
  • Raw peanuts  – 2 tbsp
  • 1 tsp salt

PROCEDURE

  • In a large bowl, add 1 cup of semolina, ¾ cup plain yogurt, ¼ cup water, salt and mix this well. 
  • If the consistency is too thick, add about a tablespoon of water at a time and adjust the consistency 
  • Add baking powder and mix well
  • Set the batter aside for about 10 minutes to rest 
  • Prepare an idli steamer or idli plate/mould by lightly greasing with clarified butter or oil 
  • Pour the batter to the mould and steam for about 10-15 minutes on high heat (We did use round cake tin and placed it on a stand in a pot filled with hot water, this would be an alternative way to create steam if you do not have an idli maker)
  • When done the skewer comes out clean or with little crumbs

To make the chutney: Combine 1 cup fresh grated coconut, garlic 1 clove, ginger 1 inch, tamarind piece 2 inches, green chillies 2, 2 tbsp raw peanuts & 1 tsp salt to a blender with a little water. Blend until smooth and the chutney would be ready to be devoured

PRO TIP

  • You can also add grated coconut to the idli mix and this would enhance the taste of the rava idli 
  • Serve with your favorite homemade coconut chutney or sambar (Vegetable stew)
