minutesQuiche is a French tart consisting of a crumbly pastry crust filled with egg custard and pieces of cheese, meat, seafood or vegetables. Served hot as a heavy breakfast/ brunch alternative and famous worldwide
Ingredients
- Flaky Pastry
1 ½ cup all purpose flour
90 grams soft butter
1 tsp sugar
½ tsp salt
1 egg yolk
2 tbsp cold water
- Filling
2 eggs + 1 remaining egg white
100 ml milk
100 ml heavy cream
¼ tsp salt
½ tsp pepper
1 cup shredded cheese (I used cheddar and mozzarella blend)
- Toppings
Chopped spinach, onions, mushrooms, bacon, smoked ham (As per taste)
Directions
- In a bowl, take the flour, butter, sugar & salt and combine well
- Add the egg yolk and 1 tbsp cold water and combine the mixture well. The mixture will be crumbly. Add the remaining water to get the dough together. Do not knead this dough but get it together, cling wrap and refrigerate it for 1 hour or overnight
- Prepare your 8 inch tart tin by spreading butter & flour
- Roll this dough to about ¼ inch in thickness and transfer this pastry onto the tin
- With a fork, lightly prick the pastry. Place beans over parchment paper and blind bake in a preheated oven for 15 minutes at 350F (After blind baking, save the beans for next bake)
- For the filling, mix the eggs, milk, cream, salt, pepper, cheese & your desired toppings together. You can pre-saute any veggies prior to mixing in the egg mix
- Pour this mix into the blind-baked pastry and bake for another 20 minutes until golden
- Slice and serve warm
Notes
- Make sure you use enough cold water when preparing your pastry dough. Too little water will make your dough unworkable
- You can use the remaining pastry to make an apple/blueberry pie as well & serve with some homemade vanilla ice cream
- Best combinations for toppings are spinach, onions & smoked ham
