Poha is flattened rice which is steam cooked with onions, herbs and spices. Garnished with freshly chopped coriander leaves and roasted peanuts. The origination of the word ‘Poha’ refers to flattened rice flakes. I find this recipe to not only be very wholesome but also nutritious as it is lightly processed.
We love that Poha is a very wholesome breakfast option, and that this traditional Indian dish can also be devoured as a light snack with a hot cup of tea.
There are many ways of making this breakfast option and each method is made differently in different parts of India. I have found this quick, easy spice filled option to work the best! This simple dish does not need to go with any accompaniment rather, it can stand out on its own as a main dish

Ingredients
1 ½ cups poha
1 onion, chopped
1 green chilli, chopped
1 tbsp oil
1 tsp mustard seeds
½ tsp cumin seeds
1 tsp turmeric powder
¼ tsp salt
1 tsp sugar
¼ cup fresh coriander leaves, chopped
4-5 curry leaves
1 tbsp lime juice
¼ cup roasted peanuts
Directions
- Clean poha by rinsing under cold running water. If you want to make non sticky poha you would need to use thick or medium flakes of poha. If you use thin flakes, the poha will turn out mushy after rinsing in water and will spoil the outcome
- Another way of rinsing the poha is to quickly soak in water for about 30 seconds and strain the water out. Spread over a plate and keep aside
- Heat the pan and start dry roasting the peanuts. This would take about 5 minutes to slow roast on medium heat. Keep the peanuts aside for garnishing
- Heat the pan on medium heat, add the oil. Once the oil heats up, add the mustard seeds, cumin seeds. Let them splutter
- Add onions, green chilli and curry leaves
- Saute until the onions turn translucent (If using potatoes, saute the potatoes for about 2 minutes, cover with a lid and let it cook, this step has been skipped in this recipe as we do not prefer potatoes with poha)
- Add salt, sugar, turmeric powder and mix with the onion base for about a minute
- Add the poha, mix well and steam on low heat for about 1-2 minutes
- Add the freshly chopped coriander leaves along with the lime juice and mix well
- Garnish with roasted peanuts and serve warm with a hot cup of tea
