Peach Galette

minutesPeach galette is a flaky rustic pie crust that is filled with peaches that is flavored with lime juice
Ingredients
- For the butter pastry
1 cup all purpose flour
½ cup cold unsalted butter
½ tsp cane sugar / honey
¼ tsp salt
1-2 tbsp cold water
- For peach filling:
3 of peaches, sliced (2 large/ 4 medium peaches)
1 tbsp sugar
Juice of ½ lime
1 tbsp cornstarch
Optional: Egg wash (1 yolk) or sugar
Directions
- In a large mixing bowl, add the flour, honey and salt and mix well
- Add the butter and well combine the flour in the flour with your hands (You can use a food processor to combine all of this)
- Add 1 tbsp of water and combine the flour well, the dough would be ready when it appears to be crumbly but can hold together
- Form a round flat disk tightly in plastic wrap and refrigerate for an hour before rolling out
- To make the peach filling, mix together sugar and lime juice with the sliced peaches and leave side for 10 minutes (You can add cornstarch if the peaches do leave water, about 1 tbsp)
- To make the peach galette, prepare the pastry by rolling the dough to about ⅛ inch thick and would 10 inches in diameter
- Transfer the dough to the baking pan (You may place parchment paper but not required)
Time to assemble this galette, assemble the peaches in an even decorative layer leaving around 2 inches around the edge - Fold the pastry over the peaches, overlapping the pastry as required
- Brush the pastry will egg wash or generously sprinkle with sugar
- Bake for about 40 minutes at 400F, until the pastry is golden and the peach juices begin to bubble
- Remove from the oven and cool on a baking rack until room temperature. While still warm, serve with a scoop of vanilla ice cream/ cream or powdered sugar. Enjoy!
PRO TIP
- You can add any seasonal fruit to this that you have handy (Apples, nectarines, plums, cherries, blueberries etc.)
- Adding cornstarch is optional, a light touch will help the peach juices to thickness as it cooks in the oven
