Pav bhaji is a fast food dish from India consisting of a thick vegetable curry served with a soft bread roll.
The vegetables in this curry may include a complimentary mix of veggies like potatoes, carrots, green peas, beetroot that is mashed away into a delectable base of onions and bell peppers and loaded with spices! This is then slow cooked to perfection along with lots of butter

We love making both the pav/bread (Dinner rolls) as well as the Bhaji at home. We serve the bhaji piping hot with a dollop of butter along with chopped onions and a squeeze of lime. To ignite the flavors, the bread is also toasted with butter, coriander leaves and then fried with a little bhaji! Who does not want to have extra pav’s with all the bhaji?

Ingredients

  • 1 tbsp cooking oil

  • 1 tsp cumin seeds

  • 1 tbsp Pav Bhaji Masala

  • 3 Tomatoes, chopped

  • 3 medium potatoes

  • 2 medium carrots

  • ½ beetroot

  • ½ cup green peas

  • 1 tsp salt 

  • 1 ½ cup water

  • To Saute:
  • 2 tbsp butter

  • 1 tbsp cooking oil

  • 1 large bell pepper (Red or green), finely chopped

  • 3 onions, finely chopped

  • 1 tsp salt

  • 3 tsp pav bhaji masala

  • 2 tsp Kashmiri red chilli powder

  • 1 tsp Kasoori Methi

  • 2 tbsp coriander seed powder

  • 1 tsp ginger garlic paste

  • 1-2 drops red food color (Optional)

  • 1 tbsp lime juice

  • 1-2 cups warm water

Directions

  • In a pressure cooker, add the cumin seeds in oil. Add the pav bhaji masala and let the flavors release for about a minute. Add the diced tomatoes, potatoes, carrots, beetroot and mix it well with the spices
  • Add the green peas, some salt along with almost a cup and half of water and let this pressure cook until 2 whistles (Should take about 10 -15 minutes). Let the steam naturally release after this stage
  • Meanwhile, heat a cooking pan, add about 2 tbsps of butter and a little oil. Start by sauteing the finely chopped bell pepper for a couple of minutes
  • Add the finely chopped onions and saute this well for about 5 minutes
  • Add 3 tbsp of Pav Bhaji masala along with 2 tsp of kashmiri red chilli powder. Let the spices release its flavors for a few minutes
  • Add 1 tsp Kasoori methi, 2 tsp coriander seed powder, 1 tsp ginger garlic paste a few drops of red food color (optional) along with 1 tbsp of lime juice
  • Mix all of these spices with the mushy onions and bell pepper mix. Keep sauteing this mix for another 5 minutes
  • Now, add the ingredients from the pressure cooker into the above spice mix and keep mixing the mixture. And using a potato masher start mashing the veggies into the thick gravy!
  • If you find the mix too thick, add some water and cook until the desired consistency is reached. Add the salt and check the taste at this stage
  • Garnish with chopped coriander leaves and add a dollop of butter while serving
  • For the Pav:
  • On a flat heated pan, melt some butter and add finely chopped coriander and 1 tsp of freshly prepared pav bhaji.
  • Slice the pav and place on this and heat it until the Pav is slightly toasted
