5 large potatoes
1tsp Salt
1 tsp red cayenne pepper
½ tsp cumin
1 tbsp olive oil
1 bay leaf
- Dipping Sauce
1 clove garlic
½ tsp red cayenne pepper
Salt to taste
1 cup mayonnaise
1 tsp vinegar
1 tsp tomato paste/ sauce
Directions
- For the dipping sauce, Combine garlic, 1/2 tsp red cayenne paprika, and a pinch of salt in a mortar and pestle or food processor; process until smooth. Mix in mayonnaise, vinegar, tomato paste, until combined. Cover and refrigerate dipping sauce
- Pour water into a large saucepan, add 1 tsp salt & 1 tsp cayenne pepper, cumin and 1 bay leaf. Add the diced potatoes and bring this to a boil
- Reduce the heat, cover and simmer for about 15 minutes until the potatoes are tender
- Drain potatoes and transfer to a wire rack to cool completely
- Heat olive oil in a large cast iron skillet or Dutch oven to 350 F
- Add cooled potato cubes and bake until golden brown for about 5 to 6 minutes
- Transfer potatoes to a baking sheet lined with paper towels to cool slightly
- Toss in a bowl with spice blend and serve with dipping sauce
PRO TIP
- Use can also deep fry or shallow fry the potatoes instead of baking for that added crunch
