Marzipan is a gluten-free confectionery consisting primarily of sugar or honey and almond meal, sometimes augmented with almond oil or vanilla extract along with cashew meal. It is often made into sweets and these small marzipan are molded into shapes of fruits/ vegetables/ shells.
Marzipan is a delectable treat on Christmas cakes and or to pack along with other goodies. It is also a worldwide staple during the Christmas holidays season where sometimes it is sold as an ‘Almond cashew dough’
These marzipans are also ideal for cake decorating!

This yields around 500 grams/ 75 pieces of marzipan

Ingredients

  • 1 ½ cup almond meal

  • 1 ½ cup cashew powder

  • 2 cups sugar powder

  • 4-5 drops vanilla extract

  • 4 tsp spoon water

  • Food colors (1 drop each) – Optional

Directions

  • Start by grinding off the cashew nuts if you do not readily have cashew powder. Do not grind the cashew nuts much as it would start releasing its natural oils
  • In a large bowl, add the cashew nut powder, almond meal and the powdered sugar
  • Roughly mix the mixture, add the vanilla drops
  • Start combining the mixture by adding 1 tsp of water at a time
  • Add the water teaspoon at a time and bind the mixture well, the dough should be firm and not sticky
  • Divide the marzipan into 4 parts and add a drop each of the food color of your choice and bind/combine the marzipan mixture 
  • Using the mould of you choice, make small balls and add the marzipan mixture to the silicon mould and press to take the shape of the mould (You can use shell shaped moulds or the mould of your choice)
  • Release these small bite size marzipans from the mould and let it air dry overnight on your kitchen counter
  • These delicious uncooked marzipans are ready to be devoured

PRO TIP

  • While making the cashew powder/ meal, you can add a few tsps of sugar and then pulse in the mixture. This would help the cashew cashew oils to be absorbed 
  • You can make these a week ahead of Christmas week and store them refrigerated. Thaw at room temperature before serving and will be just as good! Store in an airtight container to about a month in the refrigerator
