Lyonnaise Potatoes

Lyonnaise potatoes is a French dish of sliced pan-fried potatoes and thinly sliced onions, sautéed in butter with parsley. The potatoes are often par-cooked before sautéing. This dish is a classic dish with onion, potatoes and lightly seasoned! 

We paired Lyonnaise potatoes with toasted sourdough bread and a glass of red wine!

INGREDIENTS

  • 4 large potatoes
  • 2 onions, sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp pepper
  • Garlic powder – 1 tsp
  • 1 tsp salt 
  • ¼ cup cilantro, chopped 

PROCEDURE

  • Peel potatoes and cut into fine ¼ inch slices. Place sliced potatoes in a pot and cover with water. Allow to boil for 2 minutes, then drain and set aside
  • On a large wok, on medium-high heat, add 2 tbsp olive oil and 1 tbsp butter, then add the par-boiled sliced potatoes
  • Season with about 1 tsp of garlic powder, 1 tsp of black pepper and 1 tsp of salt. Keep sauteeing the potatoes for about 15-20 minutes until about done 
  • Then add the sliced onions. Saute the onion until lightly caramelized which would take about 10-12 minutes 
  • Then add the chopped cilantro and saute and for about a few minutes
  • At this stage the potatoes would be cooked well and the onions would be well caramelized. Serve with toasted bread of choice   

PRO TIPS

  • Alternatively, you can substitute butter and oil with diced fresh bacon. Let the bacon saute on medium heat and use the bacon oil to saute the potatoes 
  • You can also replace garlic powder with fresh grated garlic
