French Onion Soup

The joy of making this soup is in the process of caramelizing the onions, which turns from translucent to golden brown to dark brown! Loading the french onion soup with toasted baguette and cheese is the best part! The melted cheese along with sweetness from the onions will just blow your mind away!! 

French onion soup is usually based on meat stock. We prefer making a chicken broth or a veggie broth for this french onion soup. . 

Some also flavour the french onion soup with wine however we skipped this step!

INGREDIENTS

  • 5-6 large yellow onions, thinly sliced (3.5 lbs)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt – 1 tbsp
  • 1 tbsp vinegar
  • 300 ml chicken broth/ veggie broth
  • 1 tsp pepper
  • 1 tsp oregano/thyme seasoning
  • Shredded cheese – 1 cup
  • 4-8 slices of baguette bread
  • 1 tbsp olive oil (For brushing the baguette)

PROCEDURE

  • Start by finely slicing the yellow onions, against the natural rings 
  • In a large pot, on high heat, add 2 tbsp of unsalted butter and 1 tbsp of olive oil 
  • Add the sliced onions, sprinkle with 1 tbsp of salt to kick start the caramelization process (This could take about 30 minutes to get to dark brown onions) 
  • Add 1 tbsp of vinegar, 1 tsp pepper, 1 tsp oregano/thyme seasoning and about 300 ml chicken broth 
  • Let this all simmer on medium heat for 15 minutes 
  • Slice the baguette, brush with olive oil, grill in the oven until golden brown 
  • In an oven safe dish, add the onion soup (Do not fill to the brim) – This recipe would make upto 4 large bowls of soup
  • Place about 2 baguette slices in each bowl, load with shredded cheese and grill for about 5 minutes in the oven at 350 F until the cheese is melted 

PRO TIPS

  • Depending on the size of your oven safe bowl, you can add more baguette slices & your favorite cheese to grill 
  • You can optionally add 2 tbsp of Bourbon/wine to add some additional flavoring. Do make sure to cook out the alcohol before adding the broth
  • To make this a vegetarian dish you can add vegetable stock/broth instead of a chicken or beef broth
