Crispy Garlic Baked Potato Wedges

These are crispy and crunchy spiced potato wedges that are soft from the inside are super delicious and irresistible with a kick of garlic and cheese. You can enjoy these with extra cheese and garlic butter! This recipe does not require any pre-soaking or pre-boiling! 

After making potatoes wedges once you won’t be chopping french fries anymore! With prep time and bake time, these are ready under 45 minutes 

These are quick to prep and bake in the oven and are much healthier than deep frying the potato wedges. Alternatively, you can also use an air fryer to bake these!

They go very well with some Ketchup as a dipping sauce. If you are not a fan of Ketchup you can whip up a quick dipping sauce made of garlic, melted butter and some mixed thyme and rosemary

Ingredients

  • 4 large potatoes

  • ¼ cup olive oil

  • 1 tbsp grated garlic

  • ½ tsp onion powder

  • 1 ½ tsp salt

  • 1 tsp pepper powder

  • 1 tsp paprika

  • ½ cup grated cheese

  • 2 tsp fresh/dried parsley

Directions

  • Line a large baking sheet with parchment paper; set aside alternately you can also brush the tray with oil if not using parchment paper
  • Cut each potato in half lengthways and then cut each half in half lengthways until you have 8 wedges. Make sure they are about the same thickness and size
  • In a bowl, combine the oil, grated garlic, onion powder, paprika, pepper powder, dried parsley and salt
  • Pour this spice mixture over the potatoes and toss together to coat evenly
  • Arrange potato wedges in a single layer on a large baking tray, skin-sides-down
  • Sprinkle with grated cheese and extra salt if needed
  • Bake for 40 minutes, turning wedges halfway through baking time, until golden, crisp and cooked through when tested with a fork
  • Sprinkle with some more parsley and some more grated Parmesan cheese to serve
