minutesWhat’s a warm weather sided dish that is easy to make in a few minutes? Cold pasta salad. You can also make a big batch of this and keep handy throughout the week when you don’t feel like cooking something
Ingredients
1 pack Spaghetti pasta (You can use any choice of Pasta that you have at home)
1 tsp black pepper powder
1 tbsp mustard paste
2 tbsp light mayonnaise
¼ tsp red chilli powder
¼ tsp garlic powder
1 cup diced red bell pepper (You can also use a mix of green & yellow bell peppers as well)
½ cup green peas
½ cup sweet corn
1 cup fried sausage/ ham/ pepperoni
4 hard boiled eggs
½ cup shredded/ diced cheese
1 tsp olive oil
1 tsp salt
Directions
- In a large colander, add water, salt and 1 tsp olive oil. Bring this to a simmer & add the pasta and let it boil for about 10 minutes (Cook the pasta to about 90% cooked)
- Boil the green peas & sweet corn in water, drain and let it cool
- In a large mixing bowl, add the mayonnaise, mustard paste, pepper powder, garlic powder, chilli powder & shredded cheese and mix well
- To the above mixture add the hard boiled diced eggs, fried sausage/ham/ pepperoni, green peas and sweet corn. Mix this all well together
- Add the pasta to the above mixture and mix well. You can adjust the taste by adding salt, pepper or even more mustard paste (this should be at room temp. Or you can cool in the refrigerator)
- Serve cold

- You can also added chopped olives, dried tomatoes & Jalapenos while customizing this recipe
