Chilli Pork Lettuce Cups

Chilli Pork Lettuce Cups are the easiest, quickest meal you can ever make. All you need is ground meat and a big head of fresh lettuce along with a few basic spices. This meal would be ready within 30 minutes and you can chomp on these lettuce cups guilt free! 

This chilli pork recipe is extremely versatile and if you have leftover, you can add this to tortilla wraps/ chapatis, roll the wrap, grill & serve with the dipping sauce

This is also a great way to combine veggies with meat cutting down the carbs! 

Using iceberg lettuce will give you that extra crunch 

INGREDIENTS

  • 1 tbsp oil
  • 1 onion, sliced
  • 500 grams ground pork 
  • 4-5 red mini peppers
  • 1 tsp salt
  • 1 tsp pepper
  • Garlic, grated – 1 tsp
  • 1 tsp ginger, grated 
  • 1 tbsp soy sauce 
  • Lime juice – 1 tbsp
  • 1 tbsp cilantro leaves, chopped
  • Spring onions, optional
  • 8-10 lettuce leaves, trimmed

Sweet Spicy dipping sauce

  • 1 tsp Sugar 
  • 3 tbsp Soy sauce
  • 1 tsp chilli flakes
  • 1 tsp Olive oil
  • Vinegar – 1 tsp

PROCEDURE

  • Heat olive oil in a saucepan over high heat. Add ground pork, 1 tsp salt, the 1 tsp of pepper, 1 tbsp soy sauce saute and cook until browned, about 5-7 minutes, making sure to crumble the pork as it cooks
  • Remove the crispy ground pork and place in a bowl aside 
  • In the same pan, with the residual flavoured oil on medium heat add sliced onions and saute until golden brown 
  • Add 1 tsp grated garlic, 1 tsp grated ginger, 4-5 sliced mini pepper and saute for about 3-4 minutes
  • After that add the crispy ground pork back to the pan, saute well 
  • Add 1 tbsp lime juice adjust the salt if required (Remember that soy sauce already has a high salt content so be mindful with the salt added) 
  • Add the chopped cilantro leaves and combine for another minute 
  • You can also add chopped spring onions at this stage (optional) 
  • For the sweet & spicy dipping sauce, In a small bowl combine 1 tsp sugar, 3 tbsp soy sauce, 1 tsp chilli flakes, 1 tsp olive oil, 1 tsp vinegar and mix well until the sugar is dissolved (already you can also use honey instead of sugar)  
  • Take your lettuce head and trim the bottom. Pick the leaves that are rounded in shape and separate them as small cups 
  • To serve, place about 1-2 spoonfuls of the mixture in the center of the lettuce leaf and top with the sweet & spicy dipping sauce and you are all set to devour these chilli pork lettuce cups

PRO TIP

  • You can replace pork mince with the ground meat of your choice
  • You can also crumble tofu and leverage the same recipe instead of meat 
  • This can be a great filling for tacos as well! Or even wraps (If you have leftover wraps/ chapatis add this mixture, roll the wrap, grill & serve with the dipping sauce)
