minutesThis Smoky Chickpea Stew is a hearty and filling plant-based dish that will keep you full and warm this winter!
Ingredients
1 Tbsp olive oil
2 cloves garlic
1 tsp grated fresh ginger
1 cup diced onion
1 Tbsp curry powder
1 Tbsp smoked paprika
1 cup diced tomatoes
1 15oz. can chickpeas
4 cups vegetable broth/ water
1 cup chopped spinach
Directions
- To a large hot pot, add the onion, garlic, and ginger with the olive oil and sauté over medium heat until the onions are soft and transparent
- Add the curry powder and smoked paprika, to the pot and continue to stir and cook for 1-2 minutes more to toast the spices
- Drain the chickpeas
Once the spices are toasted, fire roast the diced tomatoes and add chickpeas and spinach to the pot - Pour the vegetable broth over top or warm water, then stir until everything is combined
- Place a lid on the pot, turn the heat up to medium-high, and allow it to come to a boil Once boiled, turn the heat down to low and allow the soup to simmer with the lid in place for 30 minutes, stirring occasionally
- After 30 minutes, taste the stew and adjust the salt or other spices if desired
- Serve hot with crusty bread or crackers
PRO TIP
- You can soak dried chickpeas for about 8 hours rather than using canned chickpeas
