minutesChickpea pancakes with dried dates, figs and Greek yogurt mint sauce. Perfect for breakfast or brunch
Ingredients
1 cup Chickpea flour
1 cup water
Salt to taste
1 cups diced onions
½ cup diced tomatoes
1 cup finely chopped spinach
1 diced chilli
Directions
- Add your chickpea flour to a mixing bowl
- Add the water and salt to your flour mixture. Make sure that you mix this solution very well and that there are no lumps
- Add your diced onions, tomatoes, spinach and chilli to this mixture
- Heat a skillet over medium-high heat and brush with oil. Pour ¼ cup of this batter into the pan, tilting to completely coat the surface of the pan. Cook for about 3 minutes, turning once, until golden
- Repeat with remaining batter
PRO TIP
- Serve with dried figs, dates & a mint sauce to give it a Mediterranean touch
- Don’t have any mint sauce at home, no worries. This tastes equally good with ketchup as well
