Chickpea pancakes with dried dates, figs and Greek yogurt mint sauce. Perfect for breakfast or brunch

Ingredients

  • 1 cup Chickpea flour

  • 1 cup water

  • Salt to taste

  • 1 cups diced onions

  • ½ cup diced tomatoes

  • 1 cup finely chopped spinach

  • 1 diced chilli

Directions

  • Add your chickpea flour to a mixing bowl
  • Add the water and salt to your flour mixture. Make sure that you mix this solution very well and that there are no lumps
  • Add your diced onions, tomatoes, spinach and chilli to this mixture
  • Heat a skillet over medium-high heat and brush with oil. Pour ¼ cup of this  batter into the pan, tilting to completely coat the surface of the pan. Cook for about 3 minutes, turning once, until golden
  • Repeat with remaining batter

PRO TIP

  • Serve with dried figs, dates & a mint sauce to give it a Mediterranean touch
  • Don’t have any mint sauce at home, no worries. This tastes equally good with ketchup as well
