Chicken Skewers

These grilled chicken kabobs are made with marinated chicken all threaded into skewers and cooked to perfection. This is an easy dinner that can also be cooked in the oven. Just marinate the chicken for about 30 minutes and shallow fry with a little oil in a griddle pan is what we did and completed this meat with flatbread and a spicy green chutney!

INGREDIENTS

  • 1 kg chicken tenders/breast cut into thin long stripes
  • 1 cup – chickpea flour 
  • 2 tbsp – cornstarch
  • 1 tsp Kashmiri chilli powder
  • 1 tsp black pepper powder
  • Garlic powder – 1 tsp
  • 1 tsp coriander powder
  • Turmeric powder – 1 tsp
  • 1 tsp salt 
  • Dried parsley leaves – 2 tsp 
  • 2 tbsp soy sauce
  • Chilli sauce – 2 tbsp
  • 2 tbsp fresh coriander leaves, finely chopped
  • ½ cup yogurt
  • ½ cup water
  • 2 tbsp oil – Frying the chicken skewers

PROCEDURE

  • In a bowl, start by preparing the marinade mix by adding chickpea flour, cornstarch, chilli powder, black pepper powder, garlic powder,coriander powder, turmeric powder,dried parsley, soy sauce, chilli sauce, finely chopped fresh coriander leaves, yogurt, water & salt 
  • Mix the above all together, if the marinade is too thick, add water accordingly 1 tsp at a time
  • Add the chicken stripes and well combined into the marinade mix. Keep aside for about 30 minutes (Alternatively, overnight in the refrigerator)
  • When you are ready, heat the oil in a pan to medium hot heat, roll the chicken stripes and thread onto your wooden skewers
  • Cook for about 7-10 minutes on each side or until the chicken is cooked through
  • Serve with flatbread and spicy green chutney

PRO TIPS

  • This chicken skewers is so versatile that it can be served with tacos or added to your favorite curry sauce and also served with rice
  • Preheat the oven. Place the skewers (pre-soak in water) in a single layer on the sheet pan. Broil for 5 minutes, then flip the skewers and broil on the other side for 5 more minutes.
  • To make the green spicy chutney, to a blender add a bunch of fresh mint leaves, fresh coriander leaves, 1 green chilli, 2 cloves of garlic, 1 inch piece of ginger, 1 tsp pepper powder, 1 zest of a lime, 1 tsp lime juice, 1 tsp sugar & salt to taste. Blend with about ¼ cup of water until smooth. Adjust the water consistency accordingly
