Chicken & Mayo Sandwich

This shredded chicken & mayo sandwich is a basic recipe, perfect for adding herbs, seasoning and taking your regular sandwich a notch higher. The creativity is all up to you. Make them yours, make them delicious, make them again! 

We have flavored with Dijon mustard, garlic, pepper and lemon zest that pulls in a delicious flavor to the mayonnaise. 

Poaching chicken tenders is easy, and offers fresh flavor with just basic seasoning. Plus the stock can be repurposed as well! 

This sandwich is hearty and we love having it for lunch along with a large glass of fresh juice! Perfect for a quick meal, easy!

INGREDIENTS

  • 250 grams chicken tenders
  • 3 cups water + 1 tsp salt + 1 tsp pepper (to boil the chicken tenders)
  • ½ cup mayonnaise
  • 2 tbsp Dijon mustard paste
  • 2 cloves garlic
  • ½ garlic powder
  • 1 tsp pepper powder
  • ½ tsp dried cilantro leaves
  • Salt ½ tsp
  • ½ tsp honey/sugar
  • 1 lemon zest
  • Lettuce (thinly sliced)
  • 4-8 slices of bread

PROCEDURE

  • In a large saucepan, add about 3 cups of water and bring to a boil. Add 1 tsp of salt and 1 tsp of pepper. Add the chicken tenders and let the chicken tenders cook completely
  • Remove the chicken from the broth, shred the chicken when it’s cool enough to handle (save the stock in containers in your freezer and use while making rice)
  • Place the shredded chicken into a bowl
  • To another small mixing bowl, start by adding ½ cup of the mayonnaise, 2 tbsp mustard paste, mince 2 cloves of garlic, ½ garlic powder, 1 tsp pepper powder, ½ tsp dried cilantro leaves, ½ honey or sugar, zest of a lemon and salt, to taste. Mix gently. Add extra mayonnaise, as needed, until the spread reaches your desired consistency
  • Add this flavorful mayo sauce to the shredded chicken, and combine
  • Toast bread to your likeness, either using a toaster on on a skillet on medium heat
  • Spread the flavorful mayo shredded chicken over the toasted slice of bread, toss in some shredded lettuce, place the other toasted bread slice over, slice & devour

PRO TIPS

  • Save the chicken broth and re-purpose while making chicken gravies or while making pulav 
  • Instead of chicken tenders you can also alternatively use skinless chicken breast. Even, you have leftover chicken from a roast chicken meal, you can toss the chicken into the flavorful mayo sauce and serve a quick sandwich 
  • This sandwich tastes best with leftover bread as well! – Hearty white, whole wheat, sourdough, you name it, tastes yum!
