Ingredients
100 grams spinach
200 grams chicken tenders (Finely minced)
1 onion chopped
4 garlic cloves minced
1 tsp pepper powder
1 tsp salt
1 tsp olive oil
1 cup shredded cheese
- Bread Boat
200 ml water
1 tsp active dry yeast
1 tsp sugar
1 cup yogurt
1 tbsp butter
50 ml milk
3 ½ cups all purpose flour
1 tsp salt
1 egg for egg wash
Directions
- To make the spinach chicken mix, add olive oil to a well heated pan. Add the minced garlic and saute for about a minute
- Add the chopped onions and salt and saute this until golden brown
- Add the finely minced chicken tenders, pepper powder & saute for about 5 minutes
- Chop the spinach and add to the chicken mix. Saute on low heat for about 5 minutes and this spinach chicken mix is ready
- For the bread boat
- In a bowl, take the warm water and add in the active dry yeast, sugar and mix well. Let this sit aside on your counter for about 8-10 minutes until frothy
- In another large mixing bowl, add the flour, salt, milk, yogurt & butter and mix well
- Add the frothy yeast mix to the large mixing bowl and combine well
- Knead this mixture for 5 minutes. Cover with cling wrap and prove for 1 hour. You can rest this mixture over the kitchen countertop
- Equally cut this dough into 3 pieces
- Using your fingers, flatten each of the dough pieces into ½ inch thickness and about 10 inches in length
- Add the spinach & chicken mix to the center of the bread and fold along the edges to make a boat shaped filled bread. Repeat with the other 2 pieces
- Equally distribute the shredded cheese to each of the bread boats
- Brush egg wash on to the slides of the bread boat and bake in the oven for 15 minutes at 450F
- Additionally you can brush on some melted butter over the bread boat once cooked
PRO TIP
- Instead of chicken tenders, you can add any leftover meat to this bread boat and serve as a stuffed bread option! This dish can be had as is or with melted butter
