minutesCashew rock is a traditional East Indian/Goan Christmas delicacy that is prepared using cashew nuts, sugar, water, vanilla or rose essence along with butter! It’s all on the method on how you prepare this sweet cashew brittle.
These cashew rock pieces are bite sized, cute and the flavor is fantastic! They are loaded with cashew nuts which makes this a delicious delicacy to try out!

Ingredients
3 ¼ cup cashew nut powder/meal
2 cups sugar
1 cup water
1 tsp vanilla essence
1 tbsp butter
3-4 drops red food color
Directions
- Start by dissolving the sugar and water on medium heat on a large nonstick utensil to form a sugar syrup
- Once the sugar has completely dissolved, add the cashew nut powder
- Keep stirring constantly for about 15 minutes on medium heat
- The mixture will start to thicken and bubble and ensure to keep stirring the mixture to avoid any burnt parts
- Once the mixture starts leaving the utensil (This should take about 15-20 minutes), add the butter and vanilla essence
- Stir the mixture well. At the stage you could add 3-4 drops of red food coloring, to give the mixture a light pink pastel shade (This is optional)
- Pour the mixture on to a well greased tray, allow to cool for about 3-4 hours
- Unmould the mixture and cut into small bite sized pieces (I shaped these into small rectangles, and cut them using a sharp knife)
- Leave the cashew rock pieces to cool over the kitchen counter overnight on a tray lined with parchment paper and these would gradually harden overnight
PRO TIP
- Constantly stir the mixture to avoid any burnt parts, since the mixture will bubble while stirring, be careful while stirring the mixture
- Finally you can make these a week ahead of Christmas week and store them refrigerated. Thaw at room temperature before serving and will be just as good! Store in an airtight container to about a month in the refrigerator
