Date and Walnut cake

minutesThis delicious super easy soft and moist cake is loaded with crunchy walnuts and sweet dates. It is a perfect treat for any holiday
Ingredients
100 grams/ ½ cup all-purpose flour
15 grams/ 1 tbsp corn flour
½ tsp baking powder
½ tsp salt (optional, eliminate if using salted butter)
125 grams/ ½ cup + 1 tbsp soft butter
140 grams/ ¾ cup powered sugar
2 whole eggs + 1 egg yolk
30 ml/ 2 tbsp milk
1 tsp vanilla essence
50 grams chopped dates
50 grams chopped walnuts
Directions
- Preheat the oven to about 175 Celsius/ 350 Fahrenheit
- Mix all-purpose flour, corn flour, baking powder in a bowl & sieve the mix at least 4 times for a soft cake
- In another bowl mix eggs, milk and vanilla
- Add butter to the flour mix & stir well
- Add the wet ingredients to the flour & butter mix till everything is incorporated
- Add the chopped dates & walnut & mix well
- Pour the mix in your prepared cake tin & bake for 40 mins or until when poked through the poker comes out clean with no residue
- Cool in cake tin for 5 mins & then remove; cool completely
PRO TIP
- This cake can also be made without dates & walnuts. It would then be a simple tea/pound cake
